Method
- Mix garlic, sugar, sesame seeds (if using), and green onions (if using). Add rice vinegar and both oils; stir.
- Slice cucumbers, sprinkle with salt, and let sit for 8–12 minutes.
- Rinse cucumbers under cold water, then pat dry.
- Place cucumbers in a bowl, pour dressing over them, and toss gently.
- Garnish with sesame seeds and green onions before serving chilled.
Notes
Adjust the amount of chili oil to your preferred level of spiciness.
