Easy & Quick Spicy Asian Cucumber Salad

Ingredients
  

Salad
  • 6 Mini cucumbers or Persian cucumbers
  • 2 tsp Salt to drain water
Dressing
  • 1 tbsp Regular soy sauce
  • 2 cloves Garlic minced
  • 1 tbsp Rice vinegar or white vinegar
  • 1 tbsp Chinese chili oil
  • 1 tbsp White granulated sugar
  • 1 tsp Sesame oil
  • 1 tsp Sesame seeds
  • 2 tbsp Green onion finely sliced

Method
 

  1. Wash cucumbers and cut off the ends.
  2. Slice cucumbers using chopstick method or thinly slice. Transfer to a bowl.
  3. Sprinkle salt over cucumbers, massage, and let soak for 5-10 minutes. Rinse with cold water 3-4 times. Strain and set aside.
  4. Combine dressing ingredients in a separate bowl.
  5. Pour dressing over cucumbers and gently mix. Enjoy!

Notes

Adjust the amount of chili oil to your spice preference.
