Cucumber and Carrot Salad Recipe

Ingredients
  

Salad
  • 2 medium cucumbers
  • 2 large carrots
  • 0.25 cup fresh parsley or dill
Dressing
  • 3 tablespoons extra virgin olive oil
  • 1 medium lemon Juice from
  • Salt and pepper to taste

Method
 

  1. Wash cucumbers and carrots. Slice cucumbers, grate carrots.
  2. Chop fresh herbs finely.
  3. Whisk olive oil, lemon juice, salt, and pepper.
  4. Combine cucumbers, carrots, herbs. Drizzle with dressing and toss.
  5. Chill for 30 minutes before serving.

Notes

For a sweeter salad, add a touch of honey or maple syrup to the dressing.
