Ingredients
  

Main Ingredients
  • 16 oz cooked chicken breast, chopped approx. 450 grams or 3 cups
  • 1 cup celery, diced small 2-3 stalks
  • 1 cup apple, diced small 1 large apple
  • 0.5 cup red onion, diced small try using my pickled red onions!
  • 0.5 cup mayonnaise or substitute a ⅓ cup full-fat plain Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 2 tsp lemon zest
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 0.5 cup fresh Italian parsley or chives, finely chopped
  • 0.5 cup green onions, thinly sliced
  • salt and pepper, to taste

Method
 

  1. Prepare ingredients: chop onions, celery, apple, herbs, and mince garlic. Chop the cooked chicken.
  2. Combine red onion, mayonnaise, mustard, lemon zest, lemon juice, garlic, herbs, salt, and pepper in a bowl. Mix well.
  3. Add celery, apple, and green onions. Stir to combine.
  4. Add chicken and stir until evenly combined.
  5. Serve with greens or as a sandwich filling. Enjoy!

Notes

For a lighter version, use Greek yogurt instead of mayonnaise.
