Ingredients
  

Salad
  • 4 cups chopped celery
  • 3 medium apples cored and diced (Granny Smith, Honeycrisp, or your favorite)
Dressing
  • 1/2 cup mayonnaise
  • 1/4 cup chopped walnuts or pecans (optional)
  • 2 tablespoons lemon juice
  • 1 tablespoon sugar (or honey, maple syrup)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Lettuce leaves (optional, for serving)
  • 1/4 cup dried cranberries or raisins (optional)

Method
 

  1. In a large bowl, combine the chopped celery and diced apples.
  2. In a separate small bowl, whisk together the mayonnaise, lemon juice, sugar (or honey/maple syrup), salt, and pepper.
  3. Pour the dressing over the celery and apple mixture. Gently stir to coat evenly.
  4. Add the chopped walnuts/pecans and dried cranberries/raisins, if using. Stir to combine.
  5. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld. (Optional: chill for up to 2 hours).
  6. Serve the salad chilled, either on its own or over lettuce leaves. Enjoy!

Notes

For a lighter version, use Greek yogurt instead of mayonnaise.
